I would go with Ian Malcolm's "Don't you mena extinct?" line.

Well, sometimes a stinger is an added scene used to set up a sequel, so it could have been a shot of Hammond talking on a speakerphone to a boardroom, announcing "Jurassic Park is unfit for the general public and should be destroyed!"  Then a board member asks "What about Site B?"
To which Hammond thoughtfully answers "Destroy it all."

but if I had to choose an existing scene then it would be Malcolm saying "life finds a way."

We're talking about MST3K-like stingers, not something to add to the movie, but an appropriate funny couple second clip from the movie to stick at the end.

And I'm all for either "Hold onto your butts" or "That is one big pile of shit"

For me, it's gotta be the shot of Grant listening to the Triceratops' breathing, grinning like an idiot.

I'd probably be grinning like an idiot too...

I once pet a wolf, I was grinning like an idiot then.  No idea how I'd handle something that was supposed to actually be extinct, not just endangered.

I once got to pet a lion when I was visiting my aunt who worked at a zoo (the lion was sedated, of course). Their manes always look quite rough and course on TV, but they are actually pretty silky. Normally I am quite aloof and impassive in everday life, but that time I was more like a 7 year old that's just been handed an entire bag of candy for no reason... I was grinning like a moron and could barely hold still. Quite an experience.

So, yeah... imagine actually getting to touch a frickin' DINOSAUR. :)

Malcolm's line during the dinner scene:

"What you call discovery... I call the rape of the natural world."

or better yet...

Malcolm's line while laying on the ground after the T-Rex attack:

"Remind me to thank John for a lovely weekend."

What about Nedry's intense bemusement at the fake shaving cream? :^)

That is pretty bizarre.  I always imagine that he is planning some elaborate scheme against Jerry Seinfeld.

Doctor Who?

I would use the kid saying "Looks like a giant turkey".

Junkyard

Nedry squealing. There's no other option.

As a person who watched this film thoroughly a good 17,984 times, I'd have to say that the parts that still make me laugh (at the movie, mind you, not with it) are:

"Hold on to yer butts..."

When Ean Malcolm starts "har"ing in the helicopter.

Malcolm talking to himself: "Uh, do you hear that?... it's an impact tremor is what it is.... I'm fairly alarmed here."

"Sure, I've got a gas-powered jeep."

"There are plants in this building that are poisonous. You pick them because they look good, but these are aggressive living things with no idea what century they're in, and they'll defend themselves, violently if necessary."
