I'd favor the end of the scene in the cave where Gollum is interrogated by Faramir, where he (Gollum) turns around and says, "My [or the?] Precious!" and hisses/growls/makes-whatever-the-heck-that-sound-is.

My next favorite would be the close-up of the frozen "Oh s**t" look on Theoden's face just after the orcs blew the hole in the wall.

I always really liked the when the orks are shooting the giant arrows at Helm's Deep to lift up the large scaling ladders, and one of the arrows hits a soldier directly, flying him backwards. If I had been Jackson, that would have been my cameo.
