This one is a little more difficult...

I'd say either Data reacting to the drink in the bar and Whoopi asking him if he wants more and he says "please" (for a short quick one)

or

Data playing the "Tiny little lifeforms" song and it ending with the perplexed look on Riker's face. (for a slightly longer that usual one)

The bit at the bar is my first choice.  The Lifeforms song is good too.  There's also a real quickie from the scene on the space station, when Data loses it, laughes insanely, then collapses.

I think Kirk's death scene when his little double is glued to the bridge and goes bouncing down the mountain like a dropped action figure is pretty silly. It'd look good in a stinger.

I find it odd that Data chose to use 20th/21st century profanity, when we've seen no evidence that the word shit is still in use in the 24th century. Of course, they couldn't have used it on the show even if they wanted to, but they are pretty much sailors after all...

  I nominate something more subtle for this stinger. Picard and Riker dressed as old-time naval officers on the holodeck and Riker's line "Bad food... brutal discipline... no women..." with his sly grin to Picard at the end.
