I put on a bit of really good olive oil, sea salt and a bit of pepper.

See, order your steak blue and it comes with its own sauce.

Actually I like chimichurri.

I'm amazed at the level of violent feeling that steak preferences can bring out. There's so much couching them in a pretense of "different strokes" that's really just passive-aggressive hatred.

"Well I GUESS if you want to be a barely sapient knuckle-dragger you can insist on it being rare, and then whip out your penis in the restaurant to prove your still a man"

"Oh sure, you can get it well-done, if you don't mind eating a shoe that some hobo just had sex with. It's basically the same. Whatever man, I won't judge you for being so stupid that you stared at orange juice for seven hours because it said concentrate, and your mother has to take you inside when it rains so you don't stare up at it and drown."

I'm a hemo-ovo-lacto vegetarian, so I don't care a gremplork about how steaks are prepared. The only significance rare steaks have for me is foreshadowing to indicate a character is becoming a vampire or werewolf.

Yeah I genuinely don't care about how or if people eat steak, I truly mean it when I say "different strokes"; it's not me eating a particular steak, so it doesn't matter how a person has their steak prepared. I just like the taste of blood and the texture of almost raw meat.

It's not New york strip,  but last summer at my niece's wedding I remember that on the menu was Filet Mignon but prepared rare or medium rare only and with a crust of blue cheese.  I went with the medium rare (With any other cut of meat I prefer well-done) and it was delicious.  I think I long ago went with well done because I wanted as much of the fat cooked out of the meat as possible to reduce cholesterol.  Only later did I find that I really don't have a problem with my cholesterol levels.
Oh yeah,  I failed to pay attention what others at my table were ordering and how they wanted it cooked.  But that's me.
And I'm worse than Hitler.

I'm not a beef eater any more, but when I did eat it it was pure 1970s style: fondued! (Not in cheese, in a yummy butter/ginger concoction.)

And very, very rare. Still mooingly rare.

Now, I eat ahi, raw...and take my chances with the microbes.
