I haven't even watched the Rifftrax of Avatar yet, but yesterday, when we finally watched Avatar for the first time, the last shot had us all going, "Aaaaaaaand his eyes open!" a la Space Mutiny. Going to watch the Rifftrax now and find out now if they went there.  ;D

That's an okay riff, but the one the guys say when his eyes open is the best riff of the whole Rifftrax.

Concur.  It's certainly the one you remember.  Best final riff they've ever done, unless you count Disembaudio's singing.
