I am mainly curious the difference in the bit rate for the video? Is it the same as the ISO?  The ISOs are usually twice as big. I know on one I downloaded (to lazy to download a comparison file) the audio was uncompressed PCM and that can take up space. Is the audio the big difference or is the video a bit better?

The mpeg2 is usually done at 2K and the ISO at 4K.

I'm downloading the MPEG2s and then turning them into the physical DVD.   Then I load the MPEG2s on my PC so I can watch them with AppleTV or ipad if I ever am away from my house and want to watch something when I cannot get to the DVD.  Should I be using the ISOs?  I mean, these are old movies with only certain "pretty" look and I do not know how important that really is.   Or am I missing out on something?

If you're making a DVD, the ISO does have a higher bitrate. For streaming to devices, though - the mpg is fine. As you said, the sources of these movies aren't that great to begin with, so you're not losing much quality at all.
