I guess my vote would go for KING KONG (1976). Not because I don't like it, it is another childhood favorite of mine. A riffing might be fun, and help gain the film a new audience. That seems to be one of the main reasons I'd like films such as ROBOTECH: THE MOVIE to be riffed. Also the Peter Jackson version is a bit long.Only real problem it seems is the World Trade Center buildings. Will be hard to be funny riffing around those. Why? it's been ten years and the movie was made decades before 911,it's not like the movie features an airliner crashing into a building. I mean The Critic starts with a shot of TWTC and it is still funny.

I'm surprised that the Peter Jackson version hasn't been riffed already...
