Jesper Kyd's work on the Assassin's Creed series is really impressive and evocative of the eras the game is trying to capture. Mass Effect has a good score, too.

Okami's traditional Japanese music is very nice.
Also want to second Total Annihilation. That is some damn good stuff.
By the way, I feel I should mention OC Remix. They remix all kinds of video game music and have very high standards. It's really great to hear all those catchy old-school game tunes fleshed out into actual songs that aren't meant to just loop. Maybe it's hard to believe, but this is very high quality stuff with real musical merit.

Terry Taylor's scores/soundtracks for both The Neverhood and SkullMonkeys (and to a lesser extent Boombots) are my favorites.
